Dominica – The Nature Island of the CaribbeanDominica is a mountainous Caribbean island known for its lush rainforests, fertile volcanic landscapes and rich culinary heritage. Local cooking draws on fresh vegetables, tropical produce, herbs, root crops and traditional Caribbean seasonings. Callaloo is an important part of Dominican food culture, with recipes varying between families and households.
What Is Callaloo?Callaloo is a traditional Caribbean dish prepared with leafy greens and aromatic ingredients. In Dominica, dasheen leaves are traditionally associated with callaloo soup, although spinach can be used as an alternative. Okra contributes a characteristic texture, while coconut milk, thyme, onion, garlic and chilli create a fragrant, comforting combination. My Via Veggie Vegan version uses fresh spinach instead of dasheen leaves and adds broccoli, green peas, potato and a lighter coconut milk base. Crispy spinach leaves, two coconut cream hearts and optional rolled flatbread complete this colourful, fully plant-based interpretation.

Czechia – A Country with a Rich Soup Tradition
Czechia, also known as the Czech Republic, lies in the heart of Central Europe and is famous for its historic cities, rolling countryside and hearty culinary traditions. Soups, known as polévky, play an important role in Czech home cooking and are frequently served as the first course of a traditional meal. Potatoes, root vegetables, legumes, garlic and aromatic herbs are common ingredients, while marjoram, or majoránka, is one of the country's characteristic soup seasonings.
What Is Brokolicová Polévka s Bílými Fazolemi?
Brokolicová polévka means broccoli soup, while bílé fazole are white beans. This Via Veggie Vegan creation brings these ingredients together in a creamy, satisfying soup inspired by Czech home cooking. White beans provide natural creaminess, nutritional yeast adds savoury depth, and garlic croutons – česnekové krutony – deliver a wonderfully crispy contrast. Instead of using fresh bread, my version gives leftover homemade naan a delicious second life.

USA – A Country of Comfort Food Classics
The United States is famous for its wonderfully diverse comfort food traditions, from creamy soups and hearty casseroles to macaroni and cheese, baked potatoes and countless regional specialties. American comfort food often brings together familiar ingredients, generous flavors and satisfying textures, creating dishes that feel like a warm hug on a chilly day. Broccoli Cheddar Soup is a particularly popular example of this culinary tradition. Combining tender broccoli, carrots, a rich creamy base and the distinctive flavor of cheddar cheese, it has become a favorite in American cafés, casual restaurants and home kitchens. Especially during autumn, a steaming bowl of this comforting classic is hard to resist.
What Is Broccoli Cheddar Soup?
Broccoli Cheddar Soup is a creamy American soup traditionally prepared with broccoli, carrots, onions, cream and sharp cheddar cheese. Particularly well known through American restaurant chains such as Panera Bread, it is loved for its thick, velvety consistency and rich, savory flavor. My completely plant-based version replaces dairy ingredients with vegan cheddar, plant-based cooking cream and a vegan butter alternative, while keeping all the comforting character of the original. For Halloween, the soup gets an extra-special transformation: three little broccoli monsters, affectionately named Broccolins, rise from each bowl of melted vegan cheese. With tiny eyes made from vegan sour cream and black peppercorns, these mischievous green creatures turn an American comfort food classic into a deliciously spooky Halloween adventure.

China – A Culinary World of Regional DiversityChina has one of the world's most diverse culinary traditions, shaped by centuries of regional cooking techniques, ingredients and food culture. From delicate Cantonese preparations to the bold, spicy flavors of Sichuan and Hunan, vegetables play an important role in Chinese cuisine. Garlic, ginger, soy sauce and quick stir-frying techniques are especially familiar elements of Chinese home-style cooking.
What Is Suànróng Xīlánhuā?Suànróng Xīlánhuā (蒜蓉西兰花) literally means garlic broccoli. Traditionally, broccoli florets are briefly blanched or stir-fried with generous amounts of fresh garlic, creating a simple, aromatic vegetable dish. My Via Veggie Vegan version takes a different approach: an entire broccoli head is roasted with a glossy garlic-ginger glaze and served with water spinach, mung bean sprouts, sesame and coriander. The inspiration is Chinese; the whole-roasted presentation is my personal twist.
