Butternut & Spinach Stuffed Conchiglioni – Creamy Vegan Pasta with Lemon & Orange Zest

South Africa – A Country of Diverse Culinary Influences
South Africa is a country with an exceptionally diverse food culture shaped by Indigenous African traditions and influences from Europe, Asia and other parts of the world. Its cuisine includes everything from maize-based dishes and vegetable stews to curries, grilled foods and contemporary fusion cooking. Butternut squash is a familiar ingredient in South African home kitchens, appearing in soups, roasted vegetable dishes, salads and comforting family meals. Modern South African food magazines also celebrate creative combinations of seasonal vegetables and international cooking techniques, reflecting the country's evolving culinary landscape.

What Are Butternut & Spinach Stuffed Conchiglioni?
This dish is inspired by the recipe “Pasta served with butternut, spinach and lemon sauce” from the South African food magazine Food & Home. Rather than presenting it as a traditional South African national dish, my Via Veggie Vegan version celebrates a contemporary South African-inspired flavor combination. I transformed the original concept into stuffed Italian conchiglioni, combining roasted butternut squash with spinach, garlic, vegan sour cream, oat cream, nutritional yeast, vegan mozzarella and freshly grated nutmeg. Lemon and orange zest bring a fresh citrus aroma, while toasted pine nuts and vegan Parmesan add the finishing touches. The result is a colorful meeting of South African inspiration, Italian pasta and entirely plant-based creativity.

▣ Ingredients (2 servings)

  • 1 butternut squash
  • 200 g fresh spinach leaves
  • 1 yellow onion
  • 2 cloves garlic
  • 1 pinch freshly grated nutmeg
  • 100 g dried conchiglioni pasta, approximately 8–10 large shells, depending on size
  • 8-10 small vegan mozzarella balls
  • 50 g vegan Parmesan alternative
  • 25 g pine nuts
  • 1 tbsp nutritional yeast
  • 2 tbsp vegan sour cream
  • 1 tsp chili oil
  • 100 ml oat creme
  • salt & freshly ground black pepper to taste

♨ Preparation

  1. Roast the Butternut Squash and Cook the Pasta
Preheat the oven to 180°C conventional heat. Halve the butternut squash lengthwise, remove the seeds and brush the cut surfaces with chili oil. Place the halves cut-side up on a baking tray and roast for approximately 30 minutes, or until the flesh is tender. Meanwhile, bring a large saucepan of salted water to a boil and cook the conchiglioni according to the package instructions until al dente. Large pasta shells often require a longer cooking time than regular pasta, so begin cooking them early. Drain carefully, reserving a little pasta water, and allow the shells to cool slightly.
  2. Prepare the Vegetables and Spinach
Finely dice the yellow onion and garlic. Wash the spinach thoroughly, blanch it briefly in boiling water until just wilted, then drain well and gently squeeze out any excess moisture. Finely grate the lemon and orange zest, avoiding the bitter white pith.
  3. Prepare the Creamy Butternut Sauce
Once the butternut squash is tender, scoop out the flesh. Set aside approximately one quarter of the cooked flesh and cut it into small cubes. In a large saucepan, gently sauté the onion and garlic with a small splash of water or a little of the reserved pasta water until softened and translucent. Add the remaining roasted butternut flesh, oat cream, vegan sour cream and nutritional yeast. Season with freshly grated nutmeg, salt and freshly ground black pepper. Stir in the lemon and orange zest and simmer gently until the ingredients form a creamy sauce. Mash or blend the butternut as needed, adding a little reserved pasta water if the sauce becomes too thick.
  4. Roast the Butternut Cubes and Pine Nuts
Heat a non-stick frying pan and gently roast the reserved butternut cubes until lightly golden around the edges. Remove and set aside. In the same dry pan, toast the pine nuts over medium-low heat until fragrant and lightly golden, shaking the pan frequently to prevent burning. Remove immediately and set aside.
  5. Finish the Sauce and Fill the Conchiglioni
Fold the blanched spinach into the warm butternut sauce and stir gently until evenly distributed. Keep the sauce warm over very low heat. Spoon a little sauce into each cooked conchiglioni shell, add one vegan mozzarella ball and a few roasted butternut cubes. Arrange the filled shells in a lightly sauced ovenproof dish.
  6. Bake the Stuffed Pasta
Return the filled conchiglioni to the oven at 180°C for approximately 5–10 minutes, until heated through and the vegan mozzarella has softened or melted, depending on the product. Avoid baking too long, as the pasta shells can become dry.
  7. Arrange and Serve
Spread the remaining warm butternut and spinach sauce across two serving plates. Arrange the stuffed conchiglioni on top, distributing the roasted butternut cubes evenly. Finish with the finely grated vegan Parmesan alternative, toasted pine nuts and a little freshly ground black pepper. Garnish with fresh parsley if desired and serve immediately.

Food Story

When Dinner Becomes a Feast for the Eyes
Some dishes are delicious. Others are beautiful. And then there are those wonderful creations that manage to be both! This South African-inspired pasta definitely belongs in the third category. Honestly, I think this dish is so gorgeous that one eye alone isn’t enough to appreciate it. Both eyes get a proper feast – and there’s still plenty left to satisfy the stomach! The golden butternut sauce, vibrant green spinach, delicate pasta shells and little orange pumpkin cubes create such a beautiful combination of colors and textures. Sometimes food really does deserve its own little moment in the spotlight.

From a South African Recipe to My Own Pasta Creation
The inspiration came from the South African food magazine Food & Home, where I discovered a recipe combining pasta, butternut squash, spinach and lemon sauce. That sounded delicious already, but of course my Via Veggie Vegan kitchen had a few additional ideas. Why not use large conchiglioni shells? Why not add vegan mozzarella, nutritional yeast, creamy oat sauce and freshly grated nutmeg? And while we’re at it, let’s introduce some orange zest, roasted pine nuts and a generous finishing touch of vegan Parmesan. One idea led to another, and suddenly a simple pasta inspiration had turned into a colorful little culinary project.

Two Happy Eyes and One Very Happy Stomach
I genuinely enjoyed every part of making this dish. Roasting the butternut, preparing the creamy sauce, filling those beautiful pasta shells and finally arranging everything on the plate – it was almost as much fun as eating it afterward. Almost! The finished plate looked so inviting that I had to admire it for a moment before picking up my fork. And the taste absolutely lived up to the appearance: creamy, gently spiced, slightly citrusy, nutty and wonderfully comforting. One thing is certain: this was definitely not the last time these stuffed conchiglioni appeared in my kitchen. Some recipes are simply worth repeating!

Good to Know

South Africa – A Diverse and Evolving Food Culture
South African cuisine reflects a wide range of regional traditions and historical influences. Indigenous African ingredients and cooking methods exist alongside European, Indian, Malay and other culinary influences. Contemporary South African cooking frequently combines local produce with international techniques, making vegetable-based fusion dishes a natural part of the country's modern food scene.
Food & Home – The Inspiration Behind This Recipe
Food & Home is a South African food and lifestyle publication featuring recipes, cooking inspiration and culinary trends. Its recipe “Pasta served with butternut, spinach and lemon sauce” provided the starting point for this dish. The Via Veggie Vegan version is an independent interpretation that transforms the flavor combination into stuffed conchiglioni with additional plant-based ingredients.
Conchiglioni – Pasta Shells Made for Stuffing
Conchiglioni are large Italian pasta shells whose curved shape makes them ideal for holding creamy sauces and fillings. Their name comes from the Italian word conchiglia, meaning shell. They are commonly used in baked pasta dishes and can be filled with vegetables, cheese alternatives or other ingredients. Their size and thickness often result in a longer cooking time than smaller pasta shapes.
Butternut Squash – Naturally Sweet and Versatile
Butternut squash belongs to the winter squash family and is known for its sweet, nutty flavor and smooth orange flesh. It contains beta-carotene, which the body can convert into vitamin A as needed. Butternut is particularly suitable for roasting because heat concentrates its natural sweetness and creates a soft texture that blends easily into creamy sauces.
Spinach – A Colorful Source of Micronutrients
Spinach contains folate, vitamin K, beta-carotene and other nutrients. Its deep green color comes from chlorophyll, while its leaves also contain various naturally occurring plant compounds. Spinach loses considerable volume when heated because of its high water content. Brief blanching helps soften the leaves while keeping their vibrant color.
Why Blanch Spinach Before Adding It to the Sauce?
Blanching spinach briefly reduces its volume and makes it easier to incorporate evenly into a creamy sauce. Draining it thoroughly is particularly important in stuffed pasta recipes because excess water can dilute the filling and make the sauce too thin. Spinach naturally contains oxalates, and blanching in water can reduce some of their content.
Nutritional Yeast – A Savory Vegan Kitchen Essential
Nutritional yeast is a deactivated yeast product with a savory, slightly nutty flavor often described as cheese-like. It is widely used in vegan cooking to add depth to sauces, soups and pasta dishes. Some nutritional yeast products are fortified with vitamin B12, while others are not. Always check the packaging rather than assuming that every product provides this nutrient.
Vegan Mozzarella and Parmesan Alternatives
Plant-based cheese alternatives vary considerably in their ingredients, nutritional composition and melting behavior. Some are made primarily from coconut oil and starch, while others contain nuts, legumes or fermented ingredients. Vegan mozzarella can provide a creamy filling for baked pasta, while vegan Parmesan alternatives add a savory finishing touch. Their protein and saturated fat contents depend strongly on the product used.
Pine Nuts – Small Ingredients with Big Flavor
Pine nuts are edible seeds harvested from certain pine species. They have a delicate, buttery flavor and contain unsaturated fats, protein and minerals such as magnesium. Toasting them briefly develops their aroma and adds a pleasant crunch. Because of their relatively high fat content, they can brown quickly and should be watched carefully during roasting.
Lemon, Orange and Nutmeg – The Aromatic Finishing Touches
Lemon and orange zest contain aromatic oils that provide fresh citrus notes without adding significant liquid to the sauce. Lemon zest contributes brightness, while orange zest adds a slightly sweeter, fragrant character that pairs beautifully with roasted butternut. Freshly grated nutmeg brings a warm, subtle spice that complements creamy sauces and spinach. Together, these ingredients create a balanced flavor profile without overwhelming the vegetables.
