Vegan Croatian Bučnica – Halloween Pumpkin Strudel

Croatia – A Country of Culinary Traditions and Regional Flavors
Croatia is a country in southeastern Europe, known for its beautiful Adriatic coastline, historic cities and diverse regional cuisine. While coastal cooking is strongly influenced by Mediterranean traditions, northern Croatia is famous for hearty, rustic dishes, savory pastries and seasonal ingredients. Pumpkin and fresh cheese are particularly popular in the traditional cooking of Hrvatsko Zagorje and the Zagreb region, where homemade strudels have long been part of family food culture.

What Is Croatian Bučnica?
Bučnica is a traditional savory Croatian strudel filled with grated pumpkin or squash, fresh cheese, sour cream and often eggs, wrapped in thin, stretched pastry and baked until golden. For my Via Veggie Vegan Halloween interpretation, I replaced the dairy ingredients with creamy tofu, soy yogurt, plant-based cooking cream and vegan Cheddar. Instead of traditional strudel dough, I used flaky vegan puff pastry and shaped it into an oversized Halloween candy with twisted ends. Caramelized walnuts and a touch of maple syrup complete this playful combination of Croatian comfort food, autumn flavors and spooky creativity.

Golden vegan Croatian Bučnica pumpkin strudel shaped like a giant Halloween candy, with twisted puff pastry ends and caramelized walnut halves.

▣ Ingredients (2 servings)

  • 300 g butternut squash
  • 3 tbsp unsweetened soy yogurt
  • 2 tbsp plant-based cooking cream
  • 2 tbsp vegan cheese sauce
  • 1 tbsp nutritional yeast
  • 1 onion
  • 1 clove garlic
  • 1 tbsp fresh lemon juice
  • 1/2 tsp lemon zest
  • 1 tsp salt
  • 1/2 tsp salt, for draining the squash
  • 1 pinch freshly ground black pepper
  • 1 pinch ground nutmeg
  • 50 g vegan cheddar
  • 1 sheet vegan puff pastry
  • 2 tbsp chili oil
  • 8 walnuts
  • 1 tbsp maple syrup
  • 1 tbsp oat drink
  • to taste salt & freshly ground black pepper

♨ Preparation

  1. Prepare the Butternut Squash
Peel the butternut squash and remove the seeds.
Coarsely grate 300 g of the flesh.
Place the grated squash in a fine sieve and sprinkle with ½ teaspoon of salt.
Mix gently and leave to rest for approximately 10 minutes.
Transfer the squash to a clean kitchen towel.
Squeeze firmly to remove as much excess moisture as possible.
    Set aside.
  2. Prepare the Creamy Tofu Filling
Crumble the firm tofu into a large mixing bowl.
Peel and finely dice the onion.
Peel and finely grate the garlic.
Add the onion and garlic to the tofu.
Add the unsweetened soy yogurt, plant-based cooking cream, vegan cheese sauce, nutritional yeast, lemon juice, lemon zest, remaining salt, black pepper and nutmeg.
Mash everything together thoroughly with a fork.
The mixture should become creamy but retain a slightly crumbly texture, similar to traditional fresh cheese.
Fold in the well-drained butternut squash.
    Mix until evenly combined.
Taste and adjust the seasoning if necessary.
  3. Prepare the Puff Pastry
Preheat the oven to 180°C fan / 356°F convection.
Unroll the vegan puff pastry onto a sheet of baking parchment.
Keep the pastry chilled until shortly before filling.
Lightly brush the inside with some of the olive chili oil.
  4. Fill and Roll the Strudel
Arrange a long strip of the pumpkin and tofu filling, approximately 5 cm wide, along the pastry.
Sprinkle part of the vegan Cheddar over the filling.
Carefully roll the pastry over the first strip until the filling is enclosed.
Arrange a second strip of filling alongside the rolled section.
    Add the remaining vegan Cheddar.
Continue rolling until the filling is completely enclosed in one large strudel.
    Place the strudel seam-side down.
  5. Create the Halloween Candy Shape
Leave enough pastry at both ends to create the decorative candy-wrapper effect.
Carefully twist both ends of the pastry in opposite directions.
Shape them to resemble the twisted ends of a giant wrapped candy.
Work gently to avoid tearing the dough.
Brush the outside lightly with the remaining olive chili oil.
Transfer the strudel to a baking tray lined with parchment paper.
    Step 6 – Begin Baking
Place the strudel in the preheated oven.
Bake for approximately 20 minutes, until the puff pastry begins to rise and turn golden.
    Meanwhile, prepare the walnut topping.
  6. Caramelize the Walnuts
Carefully remove the walnut halves from their shells if necessary.
For the decorative version shown in the photograph, keep the walnut halves intact.
Heat a small non-stick frying pan over medium-low heat.
Add the walnuts and toast briefly until fragrant.
Add a small portion of the maple syrup.
Stir gently until the walnuts are lightly coated and caramelized.
Remove from the heat and set aside.
  7. Add the Maple Walnut Finish
After approximately 20 minutes of baking, briefly remove the strudel from the oven.
Lightly brush the pastry with oat drink.
Using a pastry brush, apply a narrow stripe of the remaining maple syrup along the top of the strudel.
Carefully arrange the caramelized walnut halves in an evenly spaced row along the syrup stripe.
Return the strudel to the oven.
Bake for another 10 minutes, until the pastry is beautifully golden and crisp.
If necessary, extend the baking time slightly until the pastry is fully cooked, particularly around the twisted ends and underneath the filling.
  8. Rest and Serve
Remove the finished Bučnica from the oven.
Allow it to rest for approximately 5–10 minutes.
This helps the filling settle and makes slicing easier.
Serve the strudel whole as a festive Halloween centerpiece or cut it into generous portions.
Best enjoyed warm, when the pastry is crisp and the pumpkin filling is creamy.
  9. Serving Suggestion
Present the entire Croatian Bučnica on a dark slate board or wooden serving platter.
Keep the twisted pastry ends visible to emphasize the oversized Halloween candy shape.
Arrange the caramelized walnut halves in a neat row along the golden pastry.
For the most dramatic Food Art presentation, bring the whole strudel to the table before slicing.
Serve warm, allowing the creamy butternut squash, tofu and vegan Cheddar filling to contrast with the crispy puff pastry.

Food Story

A Steamy Love Affair Between Pumpkin & Strudel
Some love stories are written in the stars. Mine was baked in the oven. As a child, I only knew strudel in its sweet and innocent form. Apple strudel, warm pastry, fruity fillings – the kind of comforting childhood romance that never really leaves you. And then there’s pumpkin. Oh, pumpkin! I’ve always had a serious weakness for it. Roasted, mashed, baked, turned into soup – give me a pumpkin and I’ll find a way to make it irresistible. And let’s not even get started on my love affair with Halloween. The spookier, the better. If there’s an opportunity to turn perfectly innocent food into something deliciously wicked, you can bet I’ll take it. So when I discovered Croatian Bučnica, a traditional savory pumpkin and cheese strudel, three of my greatest culinary passions suddenly found themselves in the same kitchen. Strudel. Pumpkin. Halloween. The chemistry was undeniable.

When Childhood Sweethearts Meet Autumn Temptation
Naturally, I decided it was time to marry my childhood sweetheart to my autumn obsession. And believe me, this marriage is anything but boring. First, I gave the traditional Croatian filling a proper vegan makeover. Out went the dairy cheese, sour cream and eggs. In came crumbled tofu, creamy soy yogurt, plant-based cooking cream, nutritional yeast and vegan cheese sauce, with a little lemon for that irresistible tang. A generous helping of vegan Cheddar made things even cheesier. Because sometimes, more really is more. Then came freshly grated butternut squash, garlic, onion and warming spices. And since I’m firmly on Team Garlic and never shy away from a little heat, a brush of olive chili oil added just the right amount of spice to this developing romance. Instead of traditional stretched strudel dough, I wrapped everything in golden vegan puff pastry.

No Tricks, Just One Very Seductive Treat
But a regular strudel? Please. It’s Halloween! So I twisted both ends into the shape of an enormous wrapped candy, gave the whole thing a glossy maple syrup finish and crowned it with caramelized walnuts. Sweet meets savory. Innocence meets temptation. Childhood nostalgia meets grown-up pleasure. The result? Golden on the outside, soft and creamy on the inside, deliciously nutty on top and just naughty enough to make you want another slice. Crispy, creamy, a little spicy and absolutely irresistible. Who knew that marrying two old loves could produce something so outrageously sexy? And the best part? This love affair is completely vegan. No tricks. Just one very seductive treat.

Good to Know

What Is Croatian Bučnica?
Bučnica is a traditional savory pumpkin strudel particularly associated with northern Croatia, including Hrvatsko Zagorje and the Zagreb region. The classic filling typically combines grated pumpkin or squash with fresh cheese, sour cream and eggs. It is wrapped in thin, stretched pastry and baked until golden. Bučnica is commonly served warm as a savory snack, light meal or part of a larger family meal. Unlike sweet pumpkin pies, traditional Bučnica is generally a savory dish.

Why Is Pumpkin Draining So Important?
Pumpkin and butternut squash naturally contain moisture. During baking, excess liquid can escape from the filling and soften the surrounding pastry. Salting the grated squash draws out some of its moisture. After approximately 10 minutes, squeezing the squash firmly in a clean kitchen towel removes much of the excess liquid. This is particularly important when using puff pastry, which needs a relatively dry filling to develop crisp, flaky layers.

How Can Tofu Replace Traditional Fresh Cheese?
Traditional Croatian Bučnica often contains fresh cheese with a mildly tangy flavor and soft, slightly crumbly texture. Firm tofu provides a neutral plant-based base. When crumbled and combined with soy yogurt, plant-based cooking cream and lemon juice, it develops a consistency inspired by fresh cheese. Nutritional yeast and vegan cheese sauce add savory depth, while vegan Cheddar creates an additional creamy, cheesy layer.

Traditional Strudel Dough or Puff Pastry?
Traditional Bučnica is usually made with thin, stretched dough. Ready-made vegan puff pastry is a convenient alternative that creates a different, noticeably flakier texture. It is not the traditional pastry, but it works particularly well for this oversized Halloween candy presentation. Keeping the puff pastry cold before filling and baking it thoroughly helps achieve a crisp, golden crust.

Why Caramelized Walnuts?
Walnuts and maple syrup are not characteristic toppings for traditional savory Bučnica. In this Via Veggie Vegan interpretation, they add a sweet-and-savory contrast to the creamy pumpkin filling. The walnuts also provide crunch and become part of the decorative Halloween candy design. Adding them towards the end of baking helps prevent the maple syrup from becoming too dark or burning.
