Spooky Breakfast Magic – Vegan Marzipan Poppy Seed Yoghurt with Oreo Bats

Via Veggie Vegan Vunderland – Where Culinary Imagination Comes Alive Welcome to my very own culinary wonderland, where childhood memories, seasonal celebrations and creative plant-based cooking come together. Via Veggie Vegan Vunderland is a special destination on my culinary journey, existing alongside – but separate from – the 195 countries I'm exploring through their traditional dishes. Here, there are no geographical borders and no limits to culinary imagination. Familiar flavours become new creations, ordinary ingredients turn into edible works of art, and a little kitchen magic is always welcome. Especially during Halloween, when even the most innocent breakfast might suddenly grow wings! What Is Spooky Breakfast Magic? Spooky Breakfast Magic is my playful vegan interpretation of a marzipan poppy seed yoghurt I loved during childhood. Homemade alcohol-free marzipan, finely ground almonds, aromatic blue poppy seeds and creamy unsweetened soy yoghurt recreate that wonderfully nostalgic flavour combination without dairy or eggs. Juicy pomegranate seeds add a refreshing fruity contrast, while handmade Oreo cookie bats with tiny edible eyes transform two simple breakfast glasses into a miniature Halloween scene. Sweet, nutty, creamy, fruity and delightfully spooky, this creation works equally well as a special breakfast or an indulgent vegan dessert. It isn't a traditional dish from any particular country – it's pure Via Veggie Vegan Vunderland imagination!

Whole roasted artichokes arranged like a flower on a turquoise ceramic platter, drizzled with creamy lemon-garlic tahini sauce and topped with pomegranate seeds, toasted pine nuts, sesame seeds and fresh parsley, surrounded by golden flatbread wedges.

Roasted Artichokes with Tahini Sauce – Yemeni-Inspired Ardi Shawki bil-Taratur

Yemen – A Land of Ancient Traditions and Aromatic Cuisine Yemen is located at the southern end of the Arabian Peninsula and has a rich culinary heritage shaped by centuries of trade, agriculture and cultural exchange. Its cuisine is known for aromatic spices, hearty stews, traditional breads and distinctive condiments. Ingredients such as garlic, herbs, legumes and sesame appear in different regional preparations, reflecting Yemen's connections with the wider Middle East. What Are Roasted Artichokes with Tahini Sauce? These roasted artichokes are a Via Veggie Vegan creation inspired by Middle Eastern and Levantine flavors rather than a documented traditional Yemeni national dish. Whole artichokes are roasted with olive oil and lemon until tender, then generously coated with taratur, a creamy sauce made from tahini, garlic, lemon juice and water. Toasted pine nuts, pomegranate seeds, sesame and fresh parsley add contrasting textures and flavors, while warm flatbread makes the dish perfect for sharing.

Belgian Brussels Sprout Salad – Warm Vegan Salad with Caramelized Walnuts & Pomegranate

Belgium – A Country of Regional Culinary Traditions Belgium is famous for much more than waffles, chocolate and fries. Its regional cuisine combines French and Flemish influences with hearty home cooking, seasonal vegetables and flavorful sauces. Brussels sprouts have a particularly strong historical association with the region around Brussels, while warm salads are a familiar part of Belgian culinary tradition. What Is Belgian Brussels Sprout Salad? This warm Brussels sprout salad is inspired by Salade Liégeoise, a traditional dish from the Liège region commonly prepared with green beans, potatoes, bacon and a tangy dressing. My Via Veggie Vegan version replaces those vegetables with tender Brussels sprout leaves, uses vegan ham instead of bacon and adds caramelized walnuts, pomegranate seeds and two edible pizza dough ghosts. It is a creative Belgian-inspired variation rather than a traditional Salade Liégeoise.
